Here is some helpful materials for the ensemble doing Carmen and Simon Boccanegra - both huge chorus shows.

CARMEN

We are using the ALKOR edition of the score published by Barenreiter, which is the version with the dialogue. However, this doesn't really affect the chorus. So, you could pick up pretty much any version. If, however, you'd prefer not to buy a score - there is a version available that you will find quite usable here:

SIMON BOCCANEGRA

There is no standard version of this opera anymore - but I've included .pdf files of the score for your use. It is recently back in print, so if you'd prefer to buy one, that will work. However, feel free to use the one below.
